1 lb of extra lean ground turkey or chicken {NO SKIN NONE OF THE NASTY BITS!! }
1 cup of cooked quinoa or chick peas [Momma food process these to a medium grind]
1 cup chopped green beans
1 cup chopped spinach, or bok choi,
1/2 cup raspberries or blueberries.. she has even used apples... which I like!
2 egg whites
1 tsp coconut oil
Mix all ingredients together place in a loaf pan which you have prepared by spraying with oven spray or by lining with parchment, and bake at 350 for about 45-50 minutes.
OR...
Gently lower the "loaf" in simmering fat free low sodium turkey stock. Cover and simmer for about 45 minutes.
We like it poached way better than baked. And it slices better once it's chilled! Ok, so I am picky, I like my slice cut in small uniform cubes. But then... I am a Princess you know...
One loaf = 6 meals-- so sayeth cheapo momma... Calories .... calories...

This something I would like! Mama is confused - just place the loaf in a pot with enough turkey stock to cover it? Wont it fall apart?
