Tastee Tuesday ----Veggie fruit bars and roasted veggie bars




Ingredients
1/4 cup chunky Apple Sauce [we make our own-- no sugar added]
1 zucchini squash shredded and drained
1 Carrot, shredded 
1/2 cup dried blueberries
1/2 cup Pumpkin Puree
1 Banana, mashed
1 teaspoon dried Parsley
1 cup Whole Wheat Flour [you can use rice flour or even garbanzo flour]
1 cup oats
one egg white

Directions
1. Preheat oven to 350 degrees Fahrenheit 
2. Line a baking sheet with parchment paper or a silicone baking mat. Spray with oven spray.
3. Mix all ingredients in a large bowl until well combined.
4. Spread onto the prepared baking sheet 1/4 inch thick and score the dough into sticks or shapes.
5. Bake for 20 to 25 minutes.
6. Cool and break into pieces, then refrigerate.

Ok, these are good.  BUT.... I like it better when she takes these:
"left over" oven roasted veggies... {LOVE THEM when she roasts them with lamb bones!} and chops them and uses them in these bars. I know... it  is more work and all, but I am worth it! You need 4 cups of chopped roasted veggies in lieu of the banana, carrot, apple sauce, blueberries, zucchini... A rough chop in your food processor and mix with the oats and "flour" of your choice and egg white.  
Spread, bake, score, cut, serve... I SCOREEEEEE!

Sounds delish! Thanks for sharing! Mama throws parsley on lots of my stuff. Guessing she doesnt likes my poopy breath i gets sometimes!
