Tasteee Tuesday ASPIC cubes

 



Tasteeeee Tusday: ASPIC
Well, you know I had a case of the nasty cough. I even got stuck at my vet's office. And a stick there is NOT a fun stick. But I am all better. Yes, my vet can think his shot fixed me. But we know the truth. IT was THE potion. Momma's cure all potion. A powerful yummy potion that has secret magic restorative powers. She calls it "ASPIC".


Really. What a weird name. You know what it really is? It is soup jelly! I am not kidding! For realsies!


You know, when your tummy is upset and real food is not going to "sit", a cube of the potion can give you lots of nutrients and keep you from dehydrating and be DELICIOUS at the same time.


Seriously, I like to play with it for a bit before I lick it to death. it is bouncy and weird. Almost worth the cough. Ok. Maybe not. But when momma makes this stuff she makes enough for the freezer so we have it on hand. I know she cheats. I know she occasionally steals a cube or two of it for one of her sauces. But, I am being the bigger dog and letting her slide since she does make a big pot of the stuff.


I pried some basic info on how to brew the potion and here it is:


From a "normal" aspic recipe, she omits the wine, onion and capers and pickles...'cause we like being alive! [Dogs do not need onions or wine or capers or... pickles]


So, get one medium chicken or turkey pieces or both.
And here is where momma gets wild... She will get pork bones and lots of turkey bones because JD can't have chicken...or beef. Otherwise she would be putting beef bones and chicken bones galore here...
1-2 carrots
2 celery stalks
2 gelatine cubes/or equivalent powder envelopes


Salt & pepper to taste


Put your bones/chicken/turkey/beef/pork in a stock pot, cover it water.
Bring to a boil, skim the foam...
Add the carrot and cook until the stock is reduced by one third. Strain and cool the broth, remove the fat that forms on the surface, and prepare the gelatine according to the instructions on the pack. Refrigerate for a few hours. When the aspic has hardened, cut it in cubes and serve!


Yes, you can cut yo the chicken etc and add it to the liquid before it solidifies... but momma says the chicken/rurkey/ pork/ beef.... whatever  is "spent" meaning tasteless... it gave up its flavor already.... so... who knows. Momma is weird that way.

Besides, if you put the bits in there, you can't really use it for your sauces.... Ohhh momma put the bits in, put them in!!!

Anyway.... get your hooman to make some of this to keep on hand in the freezer, 'cause you never know when the need arises.
