ODE to prosciutto


My ode to prosciutto

Oh delicious, oh salty, oh wonderful, oh grand morsel of heaven's delight
how do I get more of you in my sight?

Oh the scent of thy goodness toys with my soul.
Do you come only in thin slices or in a "whole"?

Oh the conflict I feel when I think of your start...
from pig, this greatness which tugs at my heart?

Parma, San Daniele, Colli Berico-Euganei, Norcia, I love you all,
my mouth waters! You are on the plate! Why is the table so tall?

As she unwraps you, your scent wafts and it's bewitching,
first, my nose, then my whole body starts twitching?

A nibble, a taste, please share a bite!
Oh thank you, thank you, what delight!

One more thought, if you please, before you close the fridge door...
"Please, Sir, I want some more."'

OOOOOh, I LUV prosciutto myself! Mama says it does come whole, but it is harder to find that way. Frankly I really like it with a nice side of good provolone cheese. Yes indeed, a stack of prosciutto and provolone --- heaven in the mouth! Yours -- rocky in california where it is getting really cold!
