Let me help you out. How about you get that nifty little grill basket out, and maybe cook us some delicious duck livers and hearts? You know... it is easy, healthy and Dr Redding [one of our DOGTORS] would approve!
Here is that recipe:
1 pound/500 grams chicken or duck livers and hearts, trimmed. Yes actually rinsed!
Brine the livers and hearts for a 30 minutes in the refrigerator. We can wait....
BRINE ingredients: 4 cups cold water, 1 tablespoon fine sea salt, go ahead, throw in a spring of rosemary, and a crushed clove of garlic, we know you like that smell! Fine, squirt some lemon in it too. Dang it, that means she is going to eat the liver too!
Light the grill/barbecue and let the coals or wood get very hot (if using a gas grill, preheat to at least 600ºF.
Grease your grilling basked so nothing will stick. [momma hates skewers, she finds the grilling basket way easier and more efficient.]
Pat dry your livers and hearts, place in the grilling basket.
Meanwhile, mix some lemon juice and olive oil and parsley and rosemary.
When the livers are cooked, you will brush that dressing on the ones you eat. Leave ours plain!!!
The livers and hearts cook very quickly so keep an eye on them! Momma, NO PHONE CALLS.
Nobody likes liver charcoal .
Now that, is worth moving for. And it makes the whole back yard worth it.

Great idea! Mom says you can usually get these "extra" parts for cheap from the butcher! I think I know what I am asking for next time we go to the grocery store!
