Salmon patties cakes for me- Tasty Tuesday.

INGREDIENTS
  • 1 can of salmon - 14-15 ounces food process it to absolutely smooth
  • 3 tablespoons potato flakes
  • 1 egg
  • Canola oil or other oil - or use cooking spray
  • 1  boiled potato mashed
  • 1 carrot shredded
  • 1 stalk of celery shredded

DIRECTIONS
  1. Combine tall the ingredients, mix well.
  2. Form this mixture into patties.
  3. You can coat them with rice flakes for extra crunchiness.
  4. You can "fry " them in about 1 TBS of oil or pray them with oven spray and bake them for 10 minutes at 325.
Serve it up already, I am hungry!

The Wendy is not so fond of these. has now discovered she likes these, as long as momma sprinkles them with some parmiggiano... Obviously she does not get that unless you are from Bari, fish should never have cheese on it!  Ugh...

Ohmiwoof! Did EVERYONE in Blogville get the Memo that Felix's favourite food was potatoes and share a potato recipe? HE's in his glory! I can't wait to try these. I daresay that the Mama will want to add a few things and make a batch for the humans as well.

Jodi, we add all the trimmings for our hooman share of the salmon patties, like garlic, onion, parsley and a sprinkle of old bay with some lemon zest pepper and a dash of tabasco, but have to keep it pretty neutral for JD to eat. The big issue was making the patties without gluten and this actually works out well.
