tasteeeeee tueeeeesday

Look momma, I am in no mood for games. You walked me within an inch of my life, [although I must admit, crossing that big double road was genius! I never smelled that side of the street before!] now I need to build up my energy levels.  So what have you got?

You got to be kidding. You are going to actually do this? Fine, but let me tell you, serving up grilled fish is now what I would call  "innovative".  Yes, of course I love grilled mahi. who doesn't?  But what about my land locked buds out there?  They are going to have to make do with some  frozen something,..  Ahh ok, All right folks, the point of this whole post is that fish is really a good protein to share with your four legged.

Let me specifically address that whole issue of things with tentacles. Momma eats those. None of us like those... they are just gross. Momma will actually go and buy herself  a tentacled one, and moan about how yummy it is. [It is at those times that I realize that she might very well be a Ferengi and that Moogie might very well be her real name. Do you think she had a lobe job? Anything is possible.]

Anyhow.  Here is how the momma preps fish:

1. Get a nice thick filet of fish. [You really need something akin to a fish steak]
2. rinse, pat dry with paper towels
3. drizzle olive oil,  sprinkle with salt, pepper, oregano or dill, and lemon to taste.
4. heat up your piastra or griddle or non stick frying pan,
5. cook your fish on moderate heat, flip only when you can see that the slice has changed color [it will look different when cooked]. Really, cooking time is based on thickness of fish. Measure thickness at the thickest part of fish before cooking. Recommended time for baking, broiling, panfrying, boiling and steaming is:
  • 10 minutes per inch thickness for fresh fish.
Flip over, cook for a couple of minutes, turn off the fire, put a lid on it and let carryover heat finish the cooking process.

What are we , uncivilized? How about some delish wild rice with that? Honestly, do I have have to do ALL the thinking here????

sigh. 'vie

YUM! We eat so much fish at our house. It's one of the best parts of living on the coast. I prefer dill with mine.
