Let's eat dinner together on this tasty Tuesday...........................

A wooofderful soup that we all share, two and four legged.
  • 2 ribs celery, diced
  • 2TBS parlsey chopped with two cloves of garlic [persillade]
  • 2 carrots, diced
  • any other vegetables desired, 1/2 cup each we like shroom, peas, zucchini, yellow squash, potatoes, spinach, swiss chard, turnips...we hate broccoli... but love cauliflower...
  • 2 tbsp oil or margarine
  • 8 cups water or vegetable broth
  • 1 cup pearled barley, uncooked
  • 1 cup pinto or white beans, pre-soaked if dry
  • 1/3 cup tomato paste or crushed tomatoes
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp celery salt (optional)
  • 1/2 tsp basil
  • 1/2 tsp  Italian spice mix
  • 1/2 tsp thyme
  • 2 large bay leaves
  • 2 parmiggiano rinds [trust me on this]
  • add last 10 minutes.. 1/2 cup small whole wheat pasta
  • at service, grated parmiggiano reggiano
In a large soup pot, saute` the  celery, carrots, persillade and any other vegetables for 3-5 minutes. Add vegetable broth or water and all other ingredients and bring to a simmer, then reduce heat to medium low. Allow to simmer for about an hour, stirring occasionally last 10 minutes, add the pasta, until barley is soft and somewhat fluffy. Add more spices to taste and enjoy!

Allow 3/4 cup serving with grilled lamb on the side for your four legged.  Your two legged will eat a lot more... they always do....
